Mediterranean Stuffed Sweet Potato

​This is a bright, tasty and super simple to make lunch that's packed with goodness.  Sweet potato and black beans give fibre and protein, cottage cheese adds calcium and avocado brings the healthy fats. Great on its own or add in a salad or some extra veg for even more nutrients.....

Serves 2

Ingredients : 

  • 2 large sweet potatoes

  • 225g cottage cheese

  • 1 ripe avocado

  • 1 tin of black beans, rinsed and drained

  • 75g cherry tomatoes, halved

  • 75g cucumber, diced

  • 40g black olives, pitted and sliced

  • 1 small finely chopped red onion

  • 2 tbsp chopped fresh parsley

  • 2 tbsp olive oil

  • 1 lemon juiced

  • 1/2 tsp dried oregano

  • 1/2 tsp smoked paprika

  • S + P 

  • Pinch of red chilli flakes (optional)

Method : 

  • Preheat the oven to 200 degrees celsius.  Scrub the sweet potatoes and pierce a few times with a fork.  Rub with olive oil and a pinch of salt, then bake for 45-50 minutes

  • While the potatoes bake, toss together the beans, tomatoes, cucumber, red onion and parsley in a bowl.  Add a tbsp of olive oil, a tbsp lemon juice, oregano, smoked paprika and a pinch of salt and pepper.  Stir until everything is mixed.

  • In a small bowl stir the cottage cheese with the lemon zest, a squeeze of lemon juice and pinch of salt and pepper. 

  • Just before the potatoes are cooked, cube the avocado and mix it with a tsp of lemon juice and salt and pepper

  • Once the potatoes are cooked, and cooled a little, split them lengthwise and fluff the centre with a fork then spoon in the cottage cheese mixture, beans and veg, and avocado.  Add an optional sprinkle of parsley or black pepper.

Susan's Top Tips...

Bake extra potatoes - they keep well in the fridge for 2-3 days

Add more veggies like broccoli, spinach or roasted peppers for an even more filling meal

Swap the black beans for lentils or chick peas for a different protein boost

  • 9 days of beautifully designed meal plans and recipes (3 day detox menu plus optional 3 day pre & post detox menus to  ease in and out)
