Aubergine alla Norma

​When the nights are cold and dark and you want something easy to batch cook for a quick dinner, this is a perfect option. Full of rich tomatoey flavours and lots of healthy goodness....

Serves 6
​
Ingredients : ​​

3 Aubergines
-
4 Cloves of Garlic
-
50g Basil
-
1/2 tsp Chilli Flakes
-
3 x 400g tins of Cherry Tomatoes
-
1 tbsp Red Wine Vinegar
-
1 tbsp Olive Oil
-
Salt and Pepper to taste

Recipe of the Month - January

Method :

Dice the aubergine into 2cm pieces and drizzle with olive oil. Place on a baking tray and grill under a medium to high heat for 5 minutes, then flip and heat for a further 5 minutes until they are charred and soft. Remove from the grill and season with salt and pepper.

Chop the garlic and basil stalks. Heat the olive oil in a large pan over a low-medium heat and add the garlic, chilli flakes and basil stalks. Gently heat for 3 minutes until golden. Add the roasted aubergine and tinned tomatoes and simmer for 20-25 minutes.

Tear the basil leaves and mix through the sauce along with the red wine vinegar and season with salt and pepper.

Susan's Top Tips...
Store leftovers in an airtight container in the fridge for up to 4 days.
Add black olives and capers to make a great pasta sauce
Leave out the chilli flakes and layer with ricotta, mozzarella and pasta sheets for lasagne
Can easily be transformed into a yummy curry sauce using curry paste, peanut butter and coconut milk. Sounds strange but totally delicious. If you'd like this recipe, just drop me a message and I'll send it to you.
