Creamy Lentil and Root Vegetable Stew

​A warming, hearty stew that's perfect for batch cooking and freezes beautifully. Packed with protein, fibre and wintery goodness plus easy to cook - what's not to love?

Serves 4-6
​
Ingredients : ​​

150g dried lentils
-
1 onion, diced
-
2 cloves of garlic, minced
-
2 carrots, chopped
-
1 parsnip, chopped
-
1 sweet potato, chopped
-
400g tin of chopped tomatoes
-
750 ml vegetable stock
-
1 tsp smoked paprika
-
1 tsp cumin
-
1 tbsp olive oil
-
Salt and pepper to taste
-
Optional: handful of fresh parsley to serve

Recipe of the Month - November

Method :
-
Heat the olive oil in a large pan and add the onion and garlic, cooking until soft
-
Add carrots, parsnip and sweet potato and cook for 5 minutes. Sprinkle in the smoked paprika and cumin
-
Stir in the lentils, chopped tomatoes and vegetable stock. Bring to the boil, then reduce heat and simmer for 20-25 minutes, until the lentils and veggies are tender

Optional step - scoop out about a third of the stew and blend until smooth, then stir back in. This gives a creamy texture while keeping some chunks for my favourite consistency

Season with salt and pepper to taste. Serve warm with fresh parsley on top

Susan's Top Tips...
Keeps in the fridge for 4 days
Red or yellow lentils cook fastest. If using green or brown lentils, simmer for an extra 15-20 minutes. You may also need to add an extra 100-200ml stock as brown/green lentils don't break down as much and the stew will be thicker.
Split into portions and freeze for uneasy midweek grab and reheat dinner
Serve with a slice of crusty bread for dunking
